Grandpa's Autumn Stew

Ingredients

  • 1 pound grass fed ground beef

  • 1 to 2 tablespoons butter or ghee

  • 1 cup chopped onions

  • 4 cups hot water

  • 1 cup each: cut-up carrots, celery, potatoes

  • 2 teaspooons coarse sea salt

  • ½ teaspoon freshly ground black pepper

  • 1 teaspoon malt extract

  • 1 bay leaf, crumpled

  • Pinch of basil

  • 6 whole tomatoes, stems removed

DIRECTIONS

  1. Brown beef and hot fat in a heavy kettle

  2. Add onions; cook 5 min more.

  3. Add water, carrots, celery, potatoes and seasoning.  Mix thoroughly.

  4. Bring to boil, cover, simmer 20 min.

  5. Add tomatoes, cover and simmer 10 min longer.
