Grandpa's Autumn Stew
1 pound grass fed ground beef
1 to 2 tablespoons butter or ghee
1 cup chopped onions
4 cups hot water
1 cup each: cut-up carrots, celery, potatoes
2 teaspooons coarse sea salt
½ teaspoon freshly ground black pepper
1 teaspoon malt extract
1 bay leaf, crumpled
Pinch of basil
6 whole tomatoes, stems removed
Brown beef and hot fat in a heavy kettle
Add onions; cook 5 min more.
Add water, carrots, celery, potatoes and seasoning. Mix thoroughly.
Bring to boil, cover, simmer 20 min.
Add tomatoes, cover and simmer 10 min longer.
