Many natural components of foods and herbs modulate enzymes. These enzymes then can change both levels and actions of hormones.
Sulfotransferases:
These enzymes add a sulphur group to estrogen, inactivating it in order to remove it from the body. Estrogen sulfrotransferases are more active in healthy breast cells than in cancer cells.
Genistein - an isoflavone found in legumes such as soybeans

Serenoa repens (Saw palmetto)
Pygeum africanum
Urtica diocia (Nettle)
Camellia sinensis (Tea)

Aromataste Inhibitors:
Aromatase enzymes convert testosterone to estrogen.
Over-expression of aromatase increases the
risk of breast, ovarian, and endometrial cancer.
This enzyme is inhibited by:
Coumarins - from cassia cinnamon, Japanese green tea, propolis, citrus peels, bergamot, and olive oil
